Beef Osso Bucco
Our beef comes from Red Ruby Devon cattle which are 100% grass fed. The beef is 28 day matured to ensure an exceptional depth of flavour.
Osso bucco, cross-cut from the shank or lower leg of our beef steers is used to make this traditional Italian favourite, originating in the Milan area. Basically the meaty pieces with an eye of bone are casseroled in white wine, clarified/caramelised onion, carrot and celery, garlic, and herbs, until falling off the bone. The succulent, flavoursome osso bucco is usually served with saffron rice. (Please note that our osso bucco is from fully matured steers not from veal calves).
