Our beef comes from Red Ruby Devon cattle which are 100% grass fed. The beef is 28 day matured to ensure an exceptional depth of flavour.
Our beef shin is taken from the legs of our grass fed cattle. While shin is quite a tough joint of beef, cooked properly it can be truly delicious. Shin is naturally a little gelatinous, but, with slow cooking, this helps to produce a rich and tasty gravy. Shin can be used in traditional stews and casseroles alongside braising steak, although it may need slightly longer cooking times. The traditional French “Pot au Feu”, referred to by chef, Raymond Blanc as the “quintessential French family dish” is made with shin. You should try it!
