Our organic mutton is produced from our own 100% grass-fed Lleyn sheep who originated in the Lleyn Peninsula in North Wales. They are a hardy breed with sweet, flavoursome meat and carry less fat than many other sheep.
Mutton chops can be fried or grilled, as with lamb chops. One really special way is to serve them, French-trimmed and coated in savoury breadcrumbs, as “Reform Mutton Chops” – still served at the prestigious Reform Club in Pall Mall more than a century after chef, Alexis Soyer invented the dish. But a particular favourite is to use these meaty chops in a proper Lancashire Hotpot, a really substantial, traditional dish with incredible depth of flavour to warm you up in Winter!
