Our mutton is produced from our own organically farmed, 100% grass-fed Lleyn sheep who originated in the Lleyn Peninsula in North Wales. They are a hardy breed with sweet, flavoursome meat and carry less fat than many other sheep.
The leg of mutton is a prime joint that can be roasted in the normal way and served pink, or slow roasted if you prefer. Mutton has a stronger, more “gamy” flavour than lamb and is particularly suited to slow cooking and benefits from regular basting with its own juices.
