Mutton Shoulder – On the Bone


Our mutton is produced from our own organically farmed, 100% grass-fed Lleyn sheep who originated in the Lleyn Peninsula in North Wales.  They are a hardy breed with sweet, flavoursome meat and carry less fat than many other sheep.

The mutton shoulder on the bone has a sweet flavour, slightly more “gamy” than lamb and is quite delicious slow roasted with garlic and herbs.  It can be slow roasted Greek style with Mediterranean herbs and potatoes or French style with haricot beans soaked in the rich mutton juices and served with French fries.  Either way the slow roasting with regular basting of the joint in the rich juices is the key to success!
