Locally bred West Country pork.
Our pork escalopes are cut from the fillet of our locally reared pigs. The escalope can be grilled or fried, left to rest and served with a mushroom cream or mustard sauce, French fries and a green salad. Make sure that you do not overcook the escalope as it dries out quickly. An excellent way to enjoy this cut is to beat or flatten the escalope, dip it in seasoned egg and then fresh breadcrumbs before frying it as a schnitzel. A real dinner party treat!
