Our prime pork tenderloin is the favourite cut for many of our customers and, cooked well, is truly delicious. Tenderloin is a meaty cut with no fat, the pork equivalent of beef fillet, and so needs careful cooking to bring out its taste and succulence. The tenderloin can be roasted as a single piece, generally for only 20 -30 minutes, rested for 10 minutes, and then sliced and served with a Calvados cream sauce or a mustard sauce. However, many of our customers cut the tenderloin into slices and then fry as escalopes, or, alternatively, flatten them, dip in seasoned egg and then breadcrumbs before frying them as delicious schnitzels.
