Our beef comes from Red Ruby devon cattle which are 100% grass fed. The beef is 28 day matured to ensure an exceptional depth of flavour.
Our beef top rump, sometimes referred to as “thick flank” is cut from the hind quarter, just above the leg, of our grass-fed Red Ruby Devon steers. Although this joint is full of succulence and flavour it does need slow-cooking to bring out its true qualities. Top rump is perfect for hearty and filling beef casseroles or that perfect dinner party “Boeuf en Daube”, a rich Mediterranean dish, full of flavour, that will delight guests and family. Top rump can also be cut up and used to make delicious pies and pasties, or brined to make salt beef!
